Ginger Beef

1 lb. Tenderloin Tips, thinly sliced
2 Tbsp. flour
1 1/2 tsp. fresh ginger, finely chopped
1 tsp. paprika
1 tsp. seasoned salt
3 tsp. peanut oil
2/3 cup raisins
1 tsp. soy sauce
3 Tbsp. ketchup
1/2 cup beef stock
Mix together the flour, ginger, paprika and salt in a paper bag. Add the thinly sliced beef and shake until the meat is coated. Brown quickly in heated oil - DO NOT OVER- COOK - 30 seconds is about all the time it needs. When it gets past "medium" it will start to toughen. Remove the meat to a heated platter and keep warm. Add the remaining ingredients to the pan drippings; stir and simmer for 2 minutes until the sauce reaches the desired consistency. Add more beef stock if necessary. Add the meat and heat an additional minute. Serves 4.
