Turkey Sausage and Potato

1 Tablespoon vegetable oil
1 Cup onion chopped
2 Pounds (4 cups) potatoes pared and sliced 1/4-inch thick
As Needed salt and freshly ground pepper
1 Pound ITALIAN TURKEY SAUSAGE casing removed, cooked & crumbled
1/2 Cup Mozzarella cheese shredded
1 Cup low-fat milk
2 Each eggs
2 Teaspoons prepared mustard
Heat oil in large skillet; add onion and saute 5 minutes. Stir in potatoes; cover and cook over low heat 15 minutes or until tender.
Preheat oven to 350 degrees F. Spoon potato mixture into buttered 2-quart shallow baking dish. Sprinkle with salt, pepper, sausage and cheese.
Mix milk, eggs, and mustard together in a bowl. Pour over potatoes. Bake 45 minutes or until set.
