    Mexican Cornbread Casserole

    List of Ingredients




    1 cup self rising cornmeal
    2/3 cup self rising flour
    1 can cream style corn
    about 2/3 cup milk or buttermilk
    1/3 cup chopped onion
    Filling


    1/2 pound pork sausage
    1/2 pound lean ground beef
    1 medium size jar salsa
    2 cups American cheese (the more used the better)

    Recipe



    Pour oil into 9 x 13 baking pan (non-stick is not recommended).
    Heat in oven.
    Mix first five ingredients.
    Pour half the batter into hot pan. Bake at 350* til nearly done (about 15 minutes).
    Meanwhile, brown meats in non-stick skillet.
    Drain fat.
    Add salsa and cheese.
    Stir until cheese is melty.
    Spoon this mixture over baked bread.
    Top with remaining batter.
    Bake until done (about 25 minutes).
