    Vadalia Onion Cornbread Casserole

    2 1/2 cups vidalia onion -- chopped
    1/4 cup margarine -- melted
    8 ounces sour cream
    1 cup sharp cheddar cheese -- grated
    1 1/2 cups self-rising cornmeal
    2 tablespoons sugar
    1/4 teaspoon dried dill weed
    2 eggs -- beaten
    1 can cream corn
    1/4 cup milk
    1/4 cup vegetable oil
    1 dash hot sauce

    1. Saute' onion in margarine until transparent. Stir in sour cream. 1/2 cup grated cheese and set aside.

    2. Combine cornmeal, sugar and dill.

    3. Combine eggs, corn, milk, oil and hot sauce.

    4. Add egg mixture to cornmeal mixture all at once and blend.

    5. Pour batter into a lightly greased 9 inch square pan or dish.

    6. Spread onion mixture over top and sprinkle with remaining cheddar cheese.

    7. Bake in a 400 degree over for 30 minutes. An unusual combination.

    Servings: 8-10
