Chicken Curry

1 chicken (3 lb)
2 cups chicken stock
1 large cooking apple, peeled and cubed
2 cloves garlic, minced
1 medium onion, chopped
3 stalks celery, sliced
4 tsp. curry powder or to taste
4 Tbls. butter or margarine
salt and pepper
hot cooked rice
Put the chicken in the crockpot with the chicken stock.
Cover and cook on low (200ºF) for 8 hours. Remove from stock and cool.
When the chicken is cool, remove the meat from the skin and bones and cut into small pieces.
Saute the apple, garlic, onion, celery and curry powder in the butter for 5 minutes.
Add the chicken and one cup of the chicken stock.
Season to taste with salt and pepper and heat thoroughly.
Serve over hot cooked rice.
