Baking Substitutions
If you need 1 cup of Buttermilk or soured milk:
1 Tbsp vinegar or lemon juice plus enough regular milk to make 1 cup. Let stand 5 minutes
I cup regular flour:
1 cup plus 2 tbsp. cake flour
1 square [1 0z] of baking chocolate:
3 tbsp cocoa, plus 1 tbsp shortening or oil
