    Lamb With White Wine

    1 5 lb. lamb roast, trimmed of all visible fat
    5 cloves of garlic cut into 4 slivers each
    1/4 c.lemon juice
    2 tbsp. dried oregano
    1/2 c. white wine

    Preheat oven to 350.

    Wipe roast well with a damp paper towel and with a very sharp,
    small knife, cut about 20 slices into roast.

    Insert a garlic sliver into each slice.

    Mix lemon juice and oregano and rub it over the lamb with your fingers.

    Place in a roasting pan and pour the wine into the pan.

    Cook, uncovered until done, about 1 1/2 hours, basting every 20 minutes
    with the pan juices.

    Let stand 15 minutes before carving.
    Serves 8.
