Quick Chicken Mole
List of Ingredients
2 t. cocoa
1 1/2 t. chili powder
1/2 t. ground cumin
1/2 t. oregano
1/4 t. salt
8 oz. can tomato sauce
1/4 c. finely chopped onion
3 cloves garlic, minced
1 lb. boneless, skinless chicken breasts
4 oz. can diced green chiles, drained
flour tortillas or hot cooked rice
chopped tomato (optional)
shredded lettuce (optional)
sliced avocado (optional)
Recipe
Cut chicken into bite-size pieces. In 1 1/2-quart microwave-safe casserole, combine cocoa, chili powder, cumin, oregano and salt. Stir in tomato sauce, onion and garlic. Microwave, covered, on high for 2 to 3 minutes or until mixture is bubbly around edges, stirring once. Stir in chicken and green chiles. Cover and cook on high for 8 to 10 minutes or until chicken is tender and no longer pink inside, stirring every 3 minutes. Serve warm with rice or tortillas with tomato, lettuce and avocados.
