Stuffed Green Peppers

1 pound ground beef
1/3 cup finely chopped onion
2 cans (8 oz each) tomato sauce, divided
1/4 cup water
3 T parmesan cheese, divided
1 t salt
1/8 t pepper
1/2 cup instant rice
4 medium green peppers (about 1 pound) Recipe
In medium glass bowl, crumble ground beef; stir in onion. Heat 3-1/2 to 4-1/2 minutes or until beef loses pink color. Stir once, drain. Stir in 1 can tomato sauce, water, 1 T cheese, salt, and pepper. Heat, covered with plastic wrap 2-1/2 to 3-1/2 minutes. Stir in rice; let stand, covered 5 minutes. Cut peppers in half lengthwise; remove seeds and rinse. Spoon beef-rice filling into each half; place in oblong baking dish. Top with remaining sauce and cheese. Cover with plastic wrap. Heat 10 to 12 minutes, or until peppers are tender. Let stand, covered 5 minutes before serving.
