Shrimp Egg Fu Yong
List of Ingredients
2 tablespoon peanut oil
1/2 pound large shrimp
3 eggs
2 water chestnuts
1/4 cup shredded bamboo shoots
1 to 2 Chinese mushrooms
1 teaspoon chopped scallion
1/2 teaspoon salt
black or white pepper Recipe
Preparation:
1) Wash and cook Chinese mushrooms in hot water 15 minutes, drain and shred.
2) Beat eggs, mix shrimp, eggs, water chestnuts, bamboo shoots, mushrooms, scallions and salt.
Cooking:
1) Heat peanut oil. Make into medium pancakes and fry on both sides until golden brown.
Sauce:
1) Combine 1/2 cup oyster sauce, 1/2 cup water and 1 teaspoon cornstarch in saucepan.
2) Cook until thickened. Pour sauce over egg fu yong pancakes. Serve hot.
Season to taste
**You can substitute the shrimp for chicken, turkey, roast pork or crab meat.
