MOM
1 broiler-fryer chicken, cut in parts
1/2 cup butter
1/4 cup lemon juice
1 teaspoon salt
3/4 teaspoon freshly grated nutmeg
2 cloves garlic, crushed
1/4 teaspoon pepper
4 cups thinly sliced potatoes
1 cup chicken broth
In medium saucepan, place butter and melt over low heat. Remove from heat; add lemon juice, salt, nutmeg, garlic and pepper; stir. Place chicken in butter mixture, one piece at a time, turning to coat. Set aside.
Reserve any remaining butter mixture. In large shallow baking pan, place potatoes evenly over bottom. Pour chicken broth over potatoes; then place chicken, skin-side up, in a single layer on top.
Pour remaining butter mixture over chicken. Cover with foil and bake in 350 degree oven for about one hour or until fork can be inserted in chicken with ease. Uncover. Place under broiler about 5 minutes or until chicken is brown and crisp.
Makes 4 servings.
