Apple Currant Pork Chops

6 pork chops, 1-1/4- to 1-1/2- inches thick
1-1/2 cups garlic croutons
1/2 cup chopped apple
1/2 cup shredded Cheddar cheese
2 tablespoons dried currants or raisins
2 tablespoons unsalted butter, melted
2 tablespoons orange juice
1/4 teaspoon salt
1/8 teaspoon cinnamon
Preheat oven to 350 degrees F.
Cut a pocket in each of the pork chops.
In a bowl, lightly toss together the croutons, apple, cheese, and currants or raisins. In a second bowl, combine the remaining ingredients. Pour them over the crouton-fruit mixture and toss gently.
Lightly stuff the pork chops with the crouton-fruit mixture. Place them in a shallow baking pan. Bake uncovered for 1 hour, cover with foil, and bake 20 minutes longer. Serve.
