Recipe Introduction
Another heirloom recipe of my husband's grandmother, Maebelle Ledbetter.
List of Ingredients
2 c. sugar
5 T. flour
5 T. cocoa
pinch salt
5 eggs, separated
4 c. milk
1/2 stick margarine
1 1/2 tsp. vanilla flavoring
2 baked pie shells
Perfect Meringue:
5 egg whites
1 T. plus 2 heaping tsp. cornstarch
2 tsp. cold water
5 T. sugar
1/2 c. boiling water
Recipe
In a microwavable bowl, combine sugar, flour, cocoa, salt, egg yolks, milk, margarine and flavoring. Cook in microwave for 2 minutes. Stir; cook until thick, about 3 or more minutes. Pour into baked pie shells. Add meringue and place in oven to brown.
Prepare meringue: In a small saucepan, moisten 1 T. of cornstarch in cold water. Stir in boiling water. Cook over low heat; stirring constantly until liquid is clear. Set aside. Combine remaining cornstarch and sugar. In a mixing bowl, beat egg whites gradually adding sugar mixture until stiff peaks form. Slowly, fold in clear liquid mixture. Spread over chocolate pies and lightly brown in oven.
