Recipe Introduction
This is a light and creamy dessert that isn't too rich. I came up with this one after experimenting around with another recipe for this that I thought was too bland for my liking.
List of Ingredients
- 2 3.4oz packages French Vanilla instant pudding mix
- 3 Cups + 3 tablespoons milk, divided
- 1 8oz tub cool whip
- 1 12oz package graham crackers
- 6 Tablespoons butter
- 2 1oz squares semisweet chocolate
- 1 3/4 Cups confectioners sugar
- 9 Inch glass baking dish
Instructions
- Prepare pudding according to box istructions.
- Combine pudding mix and 3 cups milk in large mixing bowl. Add cool whip. Beat with electric mixer at medium speed until well blended.
- Arrange a layer of graham crackers in botom of 9 inch baking dish.
- Spread crackers with half of pudding mixture.
- Add second layer of graham crackers and spread with remaining pudding mix. Top again with another layer of graham crackers.
- combine butter and chocolate in a small saucepan. Cook over low heat, stirring frequently, until chocolate has melted. Stir in remaining milk.
- Place confectioners' sugar in a medium mixing bowl. Add chocolate mixture and beat with electric mixer at medium speed until icing is a spreadable consistency.
- Spread icing over layers.
- Chill, covered for about 8 hours.
- Cut into squares and serve.
Final Comments
For a quick fix, use store bought chocolate icing. Stir in about 1 teaspoon of milk at a time, until mixture is a spreadable consistency.
