    I loved seafood and have always tried mixing it with other types of food to see what I can come up with. This is actually a delicious dish.


    List of Ingredients


    • 12 6-inch flour tortillas (wheat if going for healthier option)
    • 4 Cups shredded Monterey Jack cheese, divided
    • 2 Cups flaked crabmeat (Imitation meat takes away from the dish)
    • 20 Cooked medium shrimp, cut into halves
    • 1 Medium onion, chopped
    • 4 Tablespoons butter, melted
    • 1/4 Cup all-purpose flour
    • 2 3/4 Cups chicken broth
    • 1 Cup sour cream
    • 1 Cup finely chopped green bell pepper
    • 1 1/4 Cups tomatillo salsa


    Instructions


    1. Heat an ungreased medium skillet over medium heat. Soften in hot skillet one at a time for about 15 seconds per side.
    2. Preheat oven to 350'. Spray 9 inch baking dish with nonstick cooking spray.
    3. Combine 3 cups cheese,crabmeat, shrimp and nion in mixing bowl, mix well.
    4. spoon about 1/4 cup of seafood mixture onto each tortilla. Roll to enclose the filling.
    5. Arrange seam side down in baking dish.
    6. Heat butter in medium saucepan over medium heat. Add flour and mix well. Stir in broth gradually. Cook while stirring constantly until sauce has thickened.
    7. Add sour cream to saucepan and mix wel. Remove from heat. Stir in bell pepper. Spoon over enchiladas.
    8. Bake until bubbly, usually around 30 minutes.
    9. Sprinkle with remaining cheese. Pour salsa over top. Bake until cheese melts about 5 minutes.


    Final Comments


    You can use other seafood like fish fillets instead of crab and shrimp. Adding chicken or pork to the mixture of seafood is also a good option.
