    Bacon Tortilla Roll Ups


    1 (16-oz.) pkg. Smoked Bacon
    1 (3-oz.) pkg. cream cheese
    3/4 cup light sour cream
    5 (9-inch) flour tortillas
    1 cup finely chopped spinach leaves
    4 green onions, sliced (about 1/4 cup)
    1 cup (4 oz.) shredded Monterey Jack or Cheddar cheese
    1 cup salsa

    Recipe




    Cook bacon until crisp. Drain, crumble and set aside.

    Combine cream cheese and sour cream; spread 1/5 of the mixture on each flour tortilla. Sprinkle 1/5 of the bacon, spinach, onions and cheese on each tortilla.

    Roll up tortillas. Wrap individually in plastic wrap. Refrigerate for at least 1 hour. Cut into 1-inch slices. Serve with salsa for dipping.

    Makes about 40 appetizers
