    Stuffed Portabello Mushrooms


    4 portabello caps, cleaned
    1 cup smoked pork jowl cut into strips
    2 cups diced zucchini
    2 cups diced squash
    1/4 cup chopped fresh basil
    1 tbsp diced garlic
    2 tbsp olive oil
    salt and pepper to taste
    shaved parmesan

    Recipe




    Preheat oven to 350 degrees.

    Saute pork in a saute pan big enough to hold all ingredients. After 3 minutes add the oil, zucchini and squash and saute until soft then add the basil, garlic, salt and pepper.

    Cook for two more minutes and remove from heat. Divide among the mushroom caps and place in oven.

    Cook until caps are soft and top with cheese and when the cheese is melted remove from oven and serve warm.
