    Anadama Bread

    Source of Recipe

    Mary

    Recipe Introduction

This New England bread has a story behind it's name. A New England farmer
had a lazy wife named Anna who would serve him the same tiresome dish of
cornmeal porridge every day. One day he became disgusted and decided to take
matters into his own hands. He began adding whatever he could find in the
kitchen to his porridge; some flour, some mead, and some molasses. He then
shaped it into a loaf and threw it on the fire. When he finally tasted his
creation he decided he could easily get through life without his
good-for-nothing wife, and exclaimed, "Anna, damn her!"

    List of Ingredients

    Anadama Bread

    1 1/2 teaspoons yeast
    1 3/4 cups bread flour
    1/4 cup whole-wheat flour
    1/4 cup coarsely ground cornmeal
    1/4 teaspoon salt -- [1 tsp. salt]
    2 tablespoons nonfat dry milk
    2 teaspoons nonfat dry milk
4 teaspoons unsalted butter -- or margarine
    3/4 cup water
    1 tablespoon water
    2 tablespoons molasses
    1 teaspoon lemon juice

    Recipe

All ingredients must be at room temperature, unless otherwise noted.

Add ingredients in the order specified in your bread machine owner's manual.

Set bread machine on the basic/standard bread making setting. Select medium or normal baking cycle. Do NOT use the programmable timer when making this bread since the recipe contains ingredients that can absorb the water prior
to the start of the bread making process.
