    Flax Seed Grain Bread (don't worry it's yummy!)


    1 1/3 cups water (at room temp for bread machine; warmed if mixing by hand)
    4 Tablespoons vegetable oil (or flax seed oil if you have it)
    2 Tablespoons sugar or honey
    2 teaspoons salt or sea salt
    3 cups ALL-PURPOSE flour (not bread flour & NOT whole-wheat)
    1 cup all-bran cereal (I used Post 100% Bran)
    ¼ to 1/3 cup whole flax seeds (I get these in the bulk bins at the grocery)
    1 Tablespoon yeast (or 1 envelope)--NOT rapid-rise

    Place ingredients in bread machine in the order listed, or according to manufacturer's instructions.

    Select the "dough" cycle, or regular cycle if you want to bake it in your machine.

    Peek in after it has mixed a bit & note texture of dough; if needed add a couple tablespoons flour or water to get a good consistency (a secret that has vastly improved my bread-machine results!)

    When dough cycle finishes, place dough in greased loaf pan & cover loosely with greased plastic wrap. Let rise in warm place 30 minutes. Remove plastic wrap (duh!) and bake 35-45 minutes at 350 degrees or until well-browned. Crust will be thin & soft, not hard & crunchy.
