Apple Butter
For each pint of cooked fruit add 1 cup sugar
To the apples and sugar add
2 cups apple cider
1 tsp cinnamon
1 tsp cloves
1/2 tsp allspice Recipe
Cook on high, covered, in crock pot for 4 hours. Stir occasionally. Cook 2 hours longer, uncovered, allow apple butter to cook down considerably. When cooked down to reasonably thick consistency, pack in sterilized jars, place sterilized lids on and process in hot water bath for 15 minutes.
I use half Granny Smith and half Golden Delicous apples.
Cooking apples:
• 4-1/2 pounds tart cooking apples (about 14 medium apples)
• 1/2 cup water (or just enough to start apples cooking and prevent sticking)
1. Wash, core, and quarter apples. In an 8- or 10-quart Dutch oven or kettle combine apples and water. Bring to boiling; reduce heat. Cover and cook for 30 minutes or until apples are very tender, stirring occasionally to prevent scorching.
