Macaroni And Cheese Mexicali
3 c. very hot tap water or
boiling water
1 1/2 tsp. salt
7 oz. (about 1 3/4 c.) elbow
macaroni
1/4 c. (4 Tbsp.) butter
3 Tbsp. flour
1 1/2 c. milk
12 oz. (3 c.) shredded Cheddar
cheese
1/2 c. sour cream
1 (4 oz.) can chopped mild
green chilies
1/2 c. chopped green onions

In 2 quart microwave casserole, place hot water, 1
teaspoon salt and macaroni. Cover, microwave at High 8 to 12
minutes, stirring after 5 minutes. Pasta should be slightly
firm. Drain well and return to casserole. In 1 quart casse-
role, place butter, flour and remaining 1/2 teaspoon salt.
Microwave at High 2 to 3 minutes, until bubbles and blended.
Gradually whisk in milk. Continue microwaving at High 5 to 7
minutes, whisking every 2 minutes, until very thick and smooth.
Stir in 2 cups cheese until completely melted. Add sour cream,
green chilies and onions to pre-cooked pasta. Sprinkle with
remaining 1 cup cheese and chili powder to taste and microwave
uncovered at High 3 to 6 minutes, until hot and bubbly. Let
stand 5 minutes before serving.
Makes 6 to 8 servings.
