Eggs Benedict
2 pkg. frozen asparagus spears
2 English muffins, split and toasted
4 slices ham
4 poached eggs
Quick Hollandaise:
1/4 c. sour cream
1/4 c. mayonnaise
1/2 tsp. prepared mustard
1 tsp. lemon juice
paprika

Microwave asparagus in package for 3 minutes. Open and
rearrange asparagus spears. Close package and microwave an
additional 2 to 3 minutes. Drain.
Place 1 muffin half on eachof 4 plates with 1 slice of ham on each muffin. Arrange asparagus on top of ham dividing equally between servings.
Microwave 2 at a time, uncovered, 45 to 60 seconds. Top with
egg and Hollandaise sauce.
Quick Hollandaise:
Combine all ingredients in saucepan and heat. Garnish
with paprika and twist of lemon. Makes 1/2 cup.
