    Glazed Microwave Carrot Cake


    Cake:

    1 pkg. yellow cake mix
    3 eggs
    1/3 cup oil
    1/2 cup water
    1/3 cup brown sugar
    1 tsp. cinnamon
    2 cup shredded carrots
    1/2 cup raisins
    1/2 cup chopped nuts

    Glaze:

    1 cup powdered sugar
    1 1/2 oz. softened cream cheese
    1-2 Tbsp. milk
    1 tsp. vanilla

    Recipe




    Blend together cake mix, eggs, oil, water, brown sugar and cinnamon.

    Beat 2 minutes.

    Fold in the carrots, raisins and nuts.

    Pour into greased and floured microwavable bundt pan.

    Microwave at medium power for 11 minutes, then on full power 5 1/2 minutes.

    Rotate pan 1/2 turn every 5 minutes.

    Cool in pan 10 minutes.

    Invert onto a serving plate to cool completely.

    Mix glaze ingredients together and drizzle over cooled cake.


    Note: Refrigerate to store.
