Microwave Orange Chicken
2 boneless, skinless chicken breasts (4 to 6-oz. each)
1/2 teaspoon salt
1/2 teaspoon finely grated orange peel
1 cup cooked rice
1/4 teaspoon ground cinnamon
1/2 cup fresh orange juice
1 1/2 teaspoons cornstarch
2 tablespoons chopped walnuts
Recipe
Place chicken breasts between two pieces of plastic wrap.
Pound lightly, forming a rectangle about 1/8-inch thick.
Remove plastic wrap and sprinkle chicken with salt.
In a small bowl, stir together orange peel, rice and cinnamon. Spoon rice mixture on top of chicken breast, spreading to within a 1/4 inch of the edge. Fold in sides of the chicken breast and roll up, jelly-roll style, starting at one end. Place chicken roll, seam-side down, in a shallow baking dish. Cover with vented plastic wrap. Microwave, covered, on MEDIUM for 4 to 5 minutes or until chicken is tender, rotating the dish a half-turn after 2 minutes.
Stir together orange juice and cornstarch. Microwave, uncovered, on HIGH for about 1 minute, or until thickened and bubbly, stirring every 20 seconds. Stir in walnuts.
Spoon orange sauce over chicken to serve.
