Saucy Parsnips
8 parsnips, sliced
2 tablespoons (30 ml) butter or margarine
1/4 cup (60 ml) brown sugar
1/4 cup (60 ml) chicken stock
2 tablespoons (30 ml) cold water
1 1/2 teaspoons (7 ml) cornstarch
1/4 cup (60 ml) pecans, coarsely chopped
Recipe
Place the parsnips in a microwave-safe casserole dish.
Cover with butter, brown sugar & chicken stock.
Cover the casserole dish with the lid.
Microwave on HIGH for 9 to 11 minutes, stirring after 5 minutes.
Mix together the cold water & cornstarch until smooth.
Stir this mixture into the parsnips.
Then, add the pecans & cover the casserole dish again.
Microwave on HIGH for 2 to 4 minutes more, or until the mixture is thickened.
Stir before serving.
