    Beef Stroganoff (Pressure Cooker)


    2 small onions
    1-1/4 pounds lean beef sirloin
    1 medium tomato
    3 tablespoons unsalted butter
    salt and pepper to taste
    2 tablespoons flour
    1/2 cup beef stock or broth
    1 teaspoon Worcestershire sauce
    1/4 cup sour cream

    Recipe




    Slice the onions. Cut beef into strips about 1/2" thick by 2-1/2" longs. Peel and seed the tomato and dice.

    Melt 2 tablespoons butter in the pressure cooker. Add the onions and cook over medium-high heat until tender. Set aside.

    Melt the remaining butter in the pressure cooker. Add the meat and brown well on all sides. Season with salt and pepper to taste, then sprinkle the flour over the top.

    Add the stock/broth and Worcestershire sauce.

    Cover pressure cooker and bring up to full pressure(15 pounds). Reduce heat to stabilize pressure and cook for 10 minutes. Release pressure and add the onions, tomato and sour cream. Stir gently and heat, if necessary, but do not let it come to a boil.

    Yield: 4 servings
