Pressure Cooker Breakfast Hash
6 eggs beaten
1 c shredded cheese (I shredded frozen American)
1 c chopped breakfast meat
6 small potatoes shredded Recipe
Coat pressure cooker in oil and preheat without cover.
Meanwhile shred potatoes in processor, rinse and squeeze all moisture out, let brown in cooker while making other preparations. Beat eggs, set aside.
Shred cheese and meat in processor as well.
Break up potatoes and add 1/4 c water, then rest of ingredients.Combine lightly. Cover and just bring to pressure. Serve immediately with toast.
Makes 4-6 servings
