Never Fried Refried Beans
1 lb. Pinto beans
1 gallon water
1 diced onion
5 - 6 cloves crushed garlic
1 large red bell pepper, diced
1 bunch fresh cilantro shredded
2 t. salt
1 t. cumin
1 t. freshly ground black pepper
Drained and rinsed beans
water to cover all ingredients.
Recipe
Bring water to a boil. Add pinto beans then turn burner off and soak for about an hour. Drain and rinse well.
Put everything into a crock pot and cook 10 to 12 hours, until beans begin =to fall apart. Mash mixture and cook just below boiling until it thickens to a runny refried bean texture. it will thicken further as it cools.
