Southern Version of Red Beans and Rice
1 tsp garlic minced
2 tsp thyme chopped fine
1 Tbsp canola oil
1 Tbsp Italian Parsley chopped fine
1 Tbsp shallot minced
1.5 Tbsp apple smoked bacon diced
1/3 cup green onions sliced thin
� cup grape tomatoes halved
1 cup basmati rice cooked
1 cup black eyed peas cooked with liquorRecipe
In a hot saut� pan, render the bacon until golden brown and crispy.
Add garlic, shallots, and thyme and saut� for about 30-45 seconds.
Add the basmati rice and herbs.
Toss together until fully incorporated.
Adjust with salt and pepper if needed.
Serve.
