    French Bread


    2T active dry yeast dissolved in
    2 1/2 cups warm (105-115*) water for 5-10 minutes

    Add:
    1T sugar
    1T salt
    2T olive oil

    Recipe




    Mix well, add flour one cup at a time until stiff,
    usually 6 but not more than 7 cups

    Knead for two minutes on setting 2 on a Kitchen Aid stand mixer or around ten minutes by hand.

    Let rise (covered) in a warm place for about an hour, punch down & form into loaves on cookie sheet, at least two inches apart.

    Cover with a wet towel & allow to rise another hour.

    Preheat oven to 450*.

    Slash tops with a sharp knife & bake for 12-15 minutes until light brown.

    For parmesan herb rolls, mix 3T Parmesan cheese with 1T garlic & 1T oregano.

    Sprinkle over bread after slashing tops.

    Very lightly press topping into the bread before baking.


    For even better results, split baked rolls lengthwise, add cheese & broil until cheese is bubbly immediately before building your sandwich.
