    Sourrdough Bread Sticks


    1 package active dry yeast
    2 cups warm water
    1/2 cup sourdough starter
    2 cups unbleached flour
    2 Tbsp. sugar
    1 cup butter, melted
    2 tsp. salt
    3 1/2 to 4 cups unbleached flour
    4 Tbsp. seeds....your choice
    2 Tbsp. coarse salt

    Dissolve yeast in warm water. Stir in sourdough starter. Blend well. Add 2 cups of flour; mix well. Let mixture rise overnight or about 12 hours.

    Stir down sponge. Add sugar, 1/2 cup butter and salt. Add about 3 cups flour. Knead until all flour has been worked into dough. Continue kneading until dough is smooth and elastic.

    Place dough in greased bowl, remembering to grease top. Cover dough. Let rise until doubled in bulk.

    Punch dough down. Cover it with the bowl and let it rest 10 minutes. Divide dough into 24 equal balls. Divide each ball into 2 equal parts; form each part into a thin stick about 6 to 8 inches long. Place sticks side by side and twist them. Repeat process with remaining dough balls. Place on ungreased cookie sheet. Brush them with remaining butter and top with seeds of your choice and salt or just salt. Cover them lightly and let rise 30 minutes.

    Place sticks in preheated 400 F. degree oven in which a pan of hot water has been placed on the oven floor. Bake them 10 to 15 minutes or until golden brown. Cool on wire racks and enjoy.

    I have made these bread sticks and brushed them with a beaten egg white wash before adding seeds instead of butter....I think it makes the seed stick better.
