Cracklin Cornbread
1/4 cup butter
2 1/2 cups self-rising cornmeal
1 cup self-rising flour
2 1/2 cups milk
2 eggs
3/4 cup bacon bits (REAL BACON)
1/2 cup diced onion
1/4 cup sugarRecipe
If desired, saute the onions until golden in a bit of butter.
Do not overcook.
Mix everything together and spoon into muffin pans or a cast iron skillet.
If using a pie pan be sure to grease the pan properl0y.
I have used the non-stick bendable muffin pans with this recipe and have not gotten the results I do with cast iron. I cook in a 450 degree oven, center-rack, until
tops are golden brown.
