Almond Peach Muffins
1 1/2 c flour
1 c sugar
3/4 ts salt
1/2 ts baking soda
2 eggs
1/2 c vegetable oil
1/2 ts vanilla
1/8 ts almond extract
1 1/4 c peaches, peeled, chopped
1/2 c almonds, chopped Recipe
In a large bowl combine flour, sugar, salt & baking soda.
In another bowl beat eggs, oil & extracts, stir in dry ingredients just until moistened.
Fold in peaches & almonds.
Fill greased or paper-lined muffin cups 3/4 full.
Bake at 375 degrees F for 20-25 minutes.
Yields about 12 standard size muffins.
