    The muffins turned out very nice. They were moist after baking for 20 minutes. Nice and brown on the top. I added a few mini chocolate chips and a few chopped walnuts to the recipe.

    List of Ingredients




    Banana Oatmeal Muffins


    1 1/2 cups (375 ml) all purpose flour
    1 cup (250 ml) rolled oats
    1/2 cup (125 ml) sugar
    2 teaspoons (10 ml) baking powder
    1 teaspoon (5 ml) baking soda
    1/2 teaspoon (2 ml) salt
    2 eggs
    1/4 cup (50 ml) oil
    1/4 cup (50 ml) milk
    1 cup (250 ml) mashed banana

    Recipe




    Preheat oven to 400ºF (200ºC).

    Grease or paper line 12 to 18 muffin cups (depending on the size you want).

    In a large bowl, measure the first 6 ingredients.

    Stir to mix.

    Make a well in the center of the dry ingredients.

    In a small bowl, beat the eggs until they are frothy.

    Mix in the oil, milk and mashed banana.

    Stir to mix together.

    Pour into the well of your dry ingredients.

    Stir just to moisten the dry ingredients.

    Your batter may be lumpy.

    Fill your muffin cups about 3/4 to 2/3rds full.

    Bake in the preheated 400 F (200 C) oven for 20-25 minutes, or until inserting a toothpick into the center comes out clean.
