Chunky Pecan Muffins
1 1/2 c. flour
2 tsp. baking powder
1/4 tsp. salt
1/2 c. brown sugar
1/2 c. margarine
1 egg, beaten
1/3 c. milk
1/4 c. maple flavored syrup
1 c. coarsely chopped pecans
1 tsp. vanillaRecipe
Combine flour, baking powder, salt and brown sugar.
Make a well in center and add margarine, egg, milk and syrup until just moistened.
Stir in pecans and vanilla.
Fill paper-lined cups 2/3 full.
Bake at 400° for 15-20 minutes.
For small muffins, bake 10 minutes.
While still warm, dip in topping.
Yields 1 dozen.
