    Gingerbread Muffins


    1 egg
    1/4 cup applesauce
    3 tbsp. vegetable oil
    1/4 cup molasses
    1/2 cup sugar
    1-1/2 cups flour
    1 tsp. baking soda
    1/2 tsp. salt
    1 tsp. ground cinnamon
    1/2 tsp. ground cloves
    1/4 tsp. ground ginger
    1/4 tsp. ground nutmeg
    1/2 cup boiling water
    Sugar

    Recipe




    In a medium bowl, beat egg, applesauce, oil, molasses and sugar, mixing well.

    Stir together dry ingredients in a medium bowl; add to egg mixture.

    Stir in water, mixing well.

    Fill greased or paper-lined muffin cups two-thirds full; sprinkle lightly with sugar.

    Bake at 350 for 20 to 25 minutes or until muffins test done.


    Yield:

    1 dozen regular muffins
    6 jumbo muffins (bake a couple of minutes longer).
