    Hot Cheese Muffins


    2 cups flour
    1/4 cups sugar
    3 tsp. baking powder
    1/2 tsp. salt
    1/8 tsp. cayenne
    2/3 cup grated sharp cheddar cheese
    1 cup milk
    1/4 cup oleo
    1 egg slightly beaten
    1 tbsp. sharp cheddar cheese for topping

    Recipe




    Grease bottoms of muffin pans. Sift flour, sugar, baking powder, salt and cayenne. Stir in 2/3 cup cheese. Measure milk in 2 cup measure.

    Add oil and egg and mix with fork. Pour into hole in flour. DO NOT BEAT.

    Mixture will be lumpy. Quickly pour 1/2 cup into the prepared muffin cups. Sprinkle a little cheese on the top. Place in a 425° oven for 20 minutes or until golden brown. Serve hot.

    Temperature: 425°

    Baking Time: 20 minutes.
