    Pecan Pie Muffins


    1 cup light brown sugar
    2 eggs
    1/2 cup flour
    2/3 cup melted butter
    1 cup chopped pecans

    Recipe




    Mix in bowl with wooden spoon.

    Line the muffin cups (or else muffins will stick to the pan).

    Pour into mini muffin pan, making each cup 2/3 full.

    Garnish with a pecan half.

    Bake at 350 about 12 to 15 minutes.
    Makes 2-1/2 to 3 dozen.

    I make them in the regular muffin tin and get a dozen of them.
