    Reese's Peanut Butter Muffins


    2 cups flour
    1/3 cup light brown sugar
    1/3 cup sugar
    1/2 tsp. salt
    2 tsp. baking powder
    1/2 cup butter, melted
    1/2 cup peanut butter
    2 eggs
    2/3 cup soy milk (can substitute regular milk)
    1 tsp. vanilla
    1 cup mini reese's peanut butter cups, halved

    Recipe




    Preheat oven to 400.

    In a large-sized bowl whisk together flour, brown sugar, sugar, salt, baking powder.

    In a medium-sized bowl whisk together butter, peanut butter, eggs, milk, vanilla until they are well combined.

    Slowly pour dry ingredients into liquid ingredients, stir until combined.

    Once combined, gently fold in reese's peanut butter cups.

    Line 12 muffin cups with liners.

    Evenly divide batter into muffin liners.

    Bake 17-20 minutes or until a toothpick inserted in center comes out clean.

    Cool 5 minutes then remove muffins, continue to cool on a wire rack.

    Store in an airtight container.

    If desired, when serving heat up in microwave about 15 seconds to melt chocolate.

    If desired, serve with butter.
