    Apricot Banana Bread


    2/3 cup shortening
    1 cup sugar
    2 eggs
    1 1/2 cups mashed bananas
    1 tablespoon lemon juice
    1 3/4 cups all-purpose flour
    1 teaspoon baking powder
    1 teaspoon salt
    1/2 cup dried apricots – chopped mixed with 1 tablespoon flour

    Recipe




    In large bowl, cream shortening and sugar.

    Beat in eggs 1 at a time, beating well after each addition.

    Blend in bananas and lemon juice.

    Mix together flour, baking soda and salt.

    Blend into banana mixture; stir in apricots.

    Turn into greased and floured 9x5x3 inch loaf pan.

    Bake in 325 degree oven 1 hour and 10 to 20 minutes, or until cake tester inserted in center comes out clean.

    Remove from pan and cool.

    Sift confectioners' sugar over top, if desired, before serving.
