    A yummy whole wheat cinnamon bread recipe for bread that's excellent with breakfast, chili, or salads.

    List of Ingredients




    Cinnamon Quick Bread


    1 cup whole wheat flour
    1 cup all purpose flour
    1 1/2 t baking soda
    1/2 tsp. salt
    1 cup sugar (sugar substitute may be used)
    1/3 cup canola oil
    1 egg
    3/4 cup buttermilk
    6 tbsp. sugar or sugar substitute
    3 tbsp. flour
    3 tbsp. cinnamon
    5 tbsp. shortening or butter

    Recipe




    Preheat oven to 350 degrees.

    lightly coat 8x4" loaf pan with cooking spray for baking.

    To make cinnamon streusel:

    Combine the 6 tbsp. sugar, 3 tbsp. flour, 3 tbsp. cinnamon.

    Cut in the shortening until a fine mixture is formed.

    Set aside.

    In a large mixing bowl combine the flours, sugar, baking soda, and salt.

    Mix until well blended.

    Make two wells in the flour mixture.

    In one well place the egg.

    In the other well place the oil.

    Pour the buttermilk over the entire surface of the flour mixture and stir until just blended.

    The dough will be slightly thick.

    Place 1/3 of the dough into the loaf pan.

    Sprinkle enough of the sugar, cinnamon mixture on top to completely cover.

    Place another 1/3 of the dough on top of the sugar mixture and spread to the edges of the pan.

    Cover this layer with enough sugar mixture to coat, reserving 1/4 cup.

    Place the last of the dough on top of the sugar mixture and spread to the edges of the pan.

    Sprinkle the reserved 1/4 cup of sugar, cinnamon mixture on the top of the dough.

    Immediately place into the preheated oven.
