    Peanut Butter Cup Bread


    1 cup sugar
    1/2 cup butter, softened
    2 eggs
    1 cup soy milk (can substitute regular milk)
    2 cups flour
    1/2 tsp. baking powder
    1/2 tsp. baking soda
    1/2 tsp. salt
    1/4 cup peanut butter
    1/3 cup peanut butter chips
    1/4 cup unsweetened cocoa powder
    2/3 cup semi-sweet chocolate chips

    TOPPING:

    peanut butter
    mini peanut butter cups

    Preheat oven to 350.

    Beat together butter, sugar in a large bowl until smooth.

    Add eggs until combined.

    Then add milk until combined.

    Slowly add flour, baking powder, baking soda, salt until combined.

    Separate batter into 2 different bowls, 1/3 of batter into 1 bowl, 2/3 into another bowl.

    In bowl with 1/3 of batter, blend in peanut butter until combined.

    Then gently stir in peanut butter chips.

    In bowl with 2/3 of batter, add in cocoa powder, chocolate chips until combined.

    Pour half of chocolate batter into a greased loaf pan.

    On top of chocolate batter add peanut butter batter.

    Add rest of chocolate batter on top of peanut butter batter.

    Bake 50-60 minutes or until a toothpick inserted in center comes out clean.

    Cool 20 minutes then remove bread from bread pan.

    If desired, spread a thin layer of peanut butter on top of bread, add peanut butter cups on top of peanut butter.

    You can also just melt peanut butter cups, pour melted chocolate over bread.
