Butter-Rich Dinner Rolls
2 packages active dry yeast
1/3 cup warm water
1/4 cup Sugar
1/4 cup butter or shortening
2 teaspoons salt
1 cup milk -- scalded
2 eggs
4 1/2 to 5 cups all purpose flour Recipe
Soften yeast in warm water.
In large mixing bowl, combine sugar, butter, salt and milk.
Cool to lukewarm.
Stir in eggs and yeast.
Gradually add flour to form a stiff dough, beating well after each addition.
Knead on floured surface until smooth and satiny, about 5 minutes.
Cover; let rise in warm place (85º to 90º F.) until doubled, about 1 hour.
Cover; let rise in warm place (85º to 90ºF.) until light and doubled in volume, about 1 hour.
Shape as desired.
Cover; let rise again in warm place until doubled, 30 to 45 minutes.
Bake at 400º for 12 to 15 minutes, Until.. golden brown.
While hot, brush with melted butter.
