    Carrot Potato Dinner Rolls


    3/4 cup mashed carrot
    3/4 cup mashed potato
    2 1/2 cups water
    1 tbs active dry yeast
    2 tbs sugar
    2 tbs shortening
    1 tbs salt
    2 tbs oregano
    6 cups all purpose flour (or whole wheat)

    Recipe




    Boil potato and carrot until tender.

    Strain, saving 2 ½ cups of the water.

    Mash potato and carrot.

    In a large bowl, dissolve yeast in ¼ cup of the saved water (make sure it is warm).

    Sprinkle sugar over yeast while dissolving.

    Wait for yeast to double in size, about 5 minutes.

    Mix yeast with the remaining water, potato, carrot, salt and oregano.

    Add 3 cups of flour, and mix with a spoon.

    Add the remaining flour by kneading with hands until dough is smooth and elastic.

    Grease a deep bowl with a bit of the shortening.

    Place the dough in the bowl.

    Cover and let rise in a warm place until doubled, about one hour.

    Punch down dough and divide into 3 pieces.

    Shape into loaves, or dinner rolls.

    Place into greased loaf pans.

    Cover and let rise again until doubled, about 30 minutes.

    Bake at 375 F for about 40 minutes.

    Remove from pans and let cool on a rack.
