    Light as a Feather Orange Rolls

    Light as a Feather Orange Rolls


    1 envelope active dry yeast
    1/4 cup very warm water
    1 cup sugar
    1 teaspoon salt
    2 eggs
    1/2 cup sour cream
    1/2 cup butter (1 stick), melted
    3 1/2 cups sifted all-purpose flour
    2 tablespoons grated orange rind

    Recipe


    Dissolve yeast in very warm water in large mixing bowl.

    Let sit until bubbly, about 5 or 10 minutes.

    Beat in with electric mixer: 1/4 cup sugar, salt, eggs, sour cream, orange rind and 6 tablespoons melted butter.

    Gradually add 2 cups flour.

    Beat until smooth.

    Work remaining flour into dough with hands.

    Cover and let rise in bowl in warm place until doubled (about 2 hours).

    Punch down and turn out onto floured surface.

    Knead until smooth and satiny.

    Roll half the dough to a 12-inch circle.

    Combine 3/4 cup sugar and orange rind.

    Brush dough with 1 tablespoon melted butter and sprinkle with one half of the orange sugar mixture.

    Cut into 12 wedges.

    Roll up, starting with the wide end.

    Repeat with remaining dough.

    Place point side down in three rows on greased baking sheet.

    Cover and let rise in warm place, about 1 hour.

    Then bake in a moderate oven (350 degrees) for 20 minutes, or so, until golden brown.

    Top with glaze (optional).

    Yields 24 rolls.
