Spanish Red Omelette
3 large red potatoes, thinly sliced 3
1 small onion, thinly sliced 1
50 ml olive oil 1/4 cup
5 eggs 5
3 ml salt 3/4 tsp
1 ml pepper 1/4 tsp
10 ml parsley, chopped 2 tsp
Recipe
Heat half the oil in a large frying pan and fry potatoes and onion over gentle heat until soft.
Remove vegetables from pan.
Beat eggs with salt, pepper and parsley.
Break up potato and onion with a sharp spatula, or leave in layers, as preferred.
Heat remaining oil in pan over moderate heat.
Pour egg over potato, then transfer to pan.
Cook gently until firm and golden brown underneath.
To turn the omelette, use a plate that will just fit inside the rim of the pan.
Place it over the omelette, invert pan and remove the omelette onto plate, then slide it back into the pan to cook the other side.
Invert back onto a serving plate, cut into wedges and serve hot or cold.
