Cocoa Pancakes
1/3 cup miniature semisweet chocolate chips
1 1/2 tbs butter, melted
1 egg
1 1/2 tsp baking powder
1/8 cup baking cocoa
3/4 tsp vanilla
1/2 cup milk
1/4 tsp salt
1/8 cup sugar
1 1/8 cups flour
Powdered sugar and whipped cream, optional
Recipe
IN a bowl, whisk flour, baking cocoa, sugar, baking powder and salt.
In another bowl, whisk eggs, milk, butter and vanilla until blended.
Add to flour mixture, stir until moistened.
Fold in chocolate chips.
Coat a skillet or griddle with cooking spray, heat.
Pour batter by 1/4 cupfuls onto griddle.
Cook until bubbles on top begin to pop.
Turn, cook until second side is lightly browned.
If desired, dust with powdered sugar and SERVE with whipped cream...
MAKES 2 SERVINGS.
