Georgia Flapjacks
2 cups flour
1 1/2 tsp. baking powder
1/2 tsp. salt
1 tbsp. sugar
2 eggs
2 cups sour milk
1 1/2 tbsp. melted butterRecipe
Sift flour and measure 2 cups full. Sift again and add soda, salt and sugar.
Mix well and sift once more.
Beat eggs lightly, add milk and gradually add to flour mixture. Beat until smooth and free from lumps, then add butter.
Pour batter into pitcher.
Heat griddle or heavy frying pan and butter it. Pour
enough batter on to the pan to make a cake 5 inches in diameter.
Cook until porous and brown underneath, then brown other side.
