    Peach Cobbler Jam


    4 C (approx. 3 pounds) pitted & finely chopped peaches OR
    (2) 29 oz cans of drained and finely chopped peaches
    1/4 C lemon juice
    1 tsp butter
    1 box powdered fruit pectin
    1 1/2 tsp cinnamon
    5 1/2 C sugar

    Recipe




    Combine peaches, lemon juice, butter, pectin and cinnamon in large pan.

    Bring to full boil and add sugar.

    Return to boil and boil HARD for 2 minutes, stirring constantly.

    Skim off foam and pour into hot, sterile jars, filling to 1/8 inch.

    Wipe rims and set two-piece lids.

    for 10-15 minutes in boiling water canner.

    Makes 7-8 half-pints
