    If cowboys ate dollar store food during cattle drives, then they would
    probably eat this Dollar Store Cowboy Casserole recipe.
    Chock full of vegetables and spices, this low cost recipe may be far
    tastier than you would think.
    Serve this cowboy food-inspired casserole as a zesty side dish or as a
    meat free main dish option.

    Dollar Store Cowboy Casserole


    2 cans (15.5 ounces) red beans, drained and rinsed well
    1 can (15 ounces) sweet corn, drained and rinsed well
    1 can (13.5 ounces) spinach, drained and rinsed well
    2 cans (10 ounces) diced tomatoes and green chilies
    1 can (12 ounces) green pickled jalapeno peppers, drained and diced
    1 jar (12 ounces) roasted red peppers, drained and diced
    Garlic powder, to taste
    Chili powder, to taste
    Dried chopped onion, to taste
    Paprika, to taste
    Italian seasoning blend, to taste
    Black pepper, to taste
    Yellow mustard, to taste (optional)

    Recipe




    Pre-heat your oven to 375 degrees F.

    In a large bowl, combine the beans, corn, spinach, diced tomato mixture, diced jalapenos and diced red peppers.

    Season mixture to taste, being sure to thoroughly integrate the spices into the mixture.

    Pour the mixture into two 9x9-inch casserole dishes that have been sprayed with cooking spray.

    Place in the oven and bake for about 20 minutes, or until everything is completely warmed through.
